These exceptional beans come from the Sidamo region – a mecca for coffee lovers, where high elevation and fertile soils create the perfect conditions for coffee cherries to ripen. To extract absolute crystalline clarity and lightness from them, the coffee underwent a classic washed process. After removing the skin and pulp, the beans ferment in water, fully unlocking their natural, citrusy-floral acidity and elegant, tea-like character.
