Sugarcane – one of the most delicate ways of decaffeination, at the same time fast, ecological, and great at preserving the taste of coffee. First, the bean is moistened to increase its volume and susceptibility to the solvent. Then the bean is washed with ethyl acetate – a natural solvent found in fruits and vegetables. It is also extracted from sugar cane, hence the method’s name. The ethyl acetate combines with the chlorogenic acids in the caffeine and leaches it from the bean. Beans are then dried until the original moisture content is achieved. This method is considered one of the more gentle, environmentally friendly, and best preserving the flavor of coffee.
