Seemingly a fake from Yunnan, yet the original.
White teas are buds – they are picked before they become leaves, which makes them slightly different in composition, well, and supposedly up to 7% caffeine (the most – we should like them the most!).
White teas are live, i.e. after harvesting, the leaves are allowed to wilt and dry to slow down oxidation, but not block it completely – so the leaves of this tea can be seasoned, they change all the time!
Pai Mu Tan is such a classic among delicate white teas that goes a bit beyond the classic style. Usually grown in Fujian province, it is made there in small quantities – so it is also made under similar conditions in Yunnan. Other names for Pai Mu Tan tea include Bai Mu Dan and White Peony.
It can be treated with boiling water, but you need to keep an eye on the dosage, as it is quite light. It gives an infusion with a fresh aroma and a smooth, velvety taste. This white tea is great for after meals or as a light afternoon tea.
