Christmas Fruitcake

Something delicious coming straight from Santa Claus— oops, Santa Clara.

Flavor comes first, obviously. But when I found out that Mateus de Oliveira Menezes grows coffee on the Santa Clara farm, I thought the name fits the Christmas season perfectly! I even asked Mateus to rename the farm to Santa Claus — maybe we’ll manage it by next Christmas.

Anyway, the farm is located in the town of Coqueiral, in the southern part of Minas Gerais. It’s a family-run estate currently transitioning from the third to the fourth generation. It holds the prestigious Rainforest Alliance certification. The farm has a large facility where coffee is dried mechanically, which guarantees high consistency and even drying every time.

In this lot we’ve got plenty of tropical fruits — but also candied ones, just like in a Christmas fruitcake! Lots of dried cranberries, all resting on a base of milk chocolate. A hit better than Last Christmas!

Pour up to 150 / 300ml at 0:40 and 1:15, and end at 1:45. Stir twice with the pour-over after each sesh.
