A LITTLE CONFUSION

It certainly won’t hurt – especially since this coffee sweeps the cupping table!!

Domingo Lopez owns 8 hectares of land in San Antonio Huista, Huehuetenango. His farm – El Pajal – is located at an altitude of 1920 meters above sea level and is planted with the botanical varieties Caturra, Catuai, Bourbon, and Pache. This one here is a mix of all of them – not bad, right?

When we were choosing this coffee for the offer, we did blind cupping (we didn’t know which coffee was from which producer, what variety, how much it costs), this coffee received the highest mark from the whole table. Classic washed, a blend of different varieties, and we were very surprised (positively of course!), very pleasant coffee with a nice and intense floral profile!

Importantly, the Domingo farm is certified organic, and Domingo grows coffee with great respect for the environment, using no pesticides either for coffee or for vegetables and fruits grown there.

How to prepare coffe?

Pour up to 150 / 300ml at 0:40 and 1:15, and end at 1:45. Stir twice with the pour-over after each sesh.
