You know how at the market, where somewhere between “Chemistry from Germany” and eggs “0” you spot “such-chocolate-that-you-have-never-seen”, because for some reason they don’t sell it in any Polish chain. Aquiares Estate is one of my favorite farms in Costa Rica. Coffees from this place are always tops. And besides the origin being good, there’s an interesting situation here regarding processing and botanical variety – a complete rarity.
The botanical variety, H1 Centroamericano, is quite rare and has many sugars in the pulp. After harvesting from the tree, these sweet cherries are spread out on a plastic mat, and then the whole thing is rolled up in such rolls that look just like a churro. The coffee lies in such a bundle for 3 days and then rests 15 days in the sun. Such anaerobic natural, but slightly different! Sweet and succulent.
