The most interesting is that Santa Maria has such a certificate – Con Manos de Mujer (i.e. something like a woman’s hand), because it is managed by 22 women, in harmony with nature and for the benefit of the local community. Probably this picture would be enough for us to get excited about this coffee, but this is just the beginning.

The sorted and cleaned fruits were allowed to ferment for the entire 22 hours, then for 50 hours to ferment without oxygen, then 15 hours drying and we have it. The Tabi variety is a relatively rare one in our offer – it is a mixture of bourbon, typica and timor varieties. Tabi means good and it really is.

The processing did its job – it’s sweet and tropical, with a hint of something a’la barrel aged, like banana and papaya dessert with Malaga ice cream!

Such coffees, that’s what it was about – not only for us, and it is even more fun for us, there is who to run with.

Pour up to 150 / 300ml at 0:40 and 1:15, and end at 1:45. Stir twice with the pour-over after each sesh.
