Just as I used to take blindly (almost) all coffees of the Pink Bourbon variety for our shelves, now I have with the Wush Wush variety. This is probably my favorite. Well, one of. Wush Wush is often very floral, but also juicy.

There is generational experience behind this coffee, but everything is signed by John Hurtado, who grew up on his parents’ farm, but decided to immigrate to the States as a teenager. He grew tired of the American dream, however, and returned to the farm after 30 years behind the big water. The farm is located between three waterfalls, and as you know, water in coffee farming is an asset that mother earth does not distribute equally. Perhaps that’s why the fruit on John’s farm is so healthy and sweet. The coffees are processed 72 hours of anaerobic fermentation. For me, this processing plus our roasting style resulted in a flavor reminiscent of mead, apricots, or ripe kiwi.

So it’s sweet, but also buzzy light!

Pour up to 150 / 300ml at 0:40 and 1:15, and end at 1:45. Stir twice with the pour-over after each sesh.

Reverse method. Pour 100 ml of water, add coffee and add the remaining 100 ml. Stir 5 times, spin and wait until 1:30.
