Pure Juiciness
It debuted in 2025, and this year we bought a lot from the same farm again, straight from the Santa Bárbara region in Honduras. José Andrés Castillo Mejía settled in Santa Bárbara back in 1985. In 1990, he bought his first farm, where he initially cultivated lower-quality coffee. About seven or eight years ago, José bought another plot of land and started growing a few specific botanical varieties—including Parainema, which we’re featuring in this bag. This natural is a coffee you can drink every day. Everything clicks here: it’s coffeey, fruity, sweet, and juicy.
José is certainly a master when it comes to cultivation and processing, but the variety you’re drinking is also a fascinating story in itself. Parainema is a coffee variety associated with Honduras, but its roots actually trace back to a laboratory in Portugal! It was selected by the Honduran institute IHCAFE. Belonging to the Sarchimor group, it is a cross between Villa Sarchí and Híbrido de Timor—a combination that marries quality potential with high plant resistance. In the cup, Parainema can delight with juicy acidity, fruitiness, and floral elegance. It’s a variety that proves rust resistance can go hand in hand with truly phenomenal flavor.
