Rested in the cool place.
Costa Rica the way we love it – a true treat from Corazón de Jesús, specifically from the Los Tonos parcel. Behind this project is Johnny Alvarado Abarca, who grows coffee in the Brunca region.
In this bag, you’ll find the Villa Sarchi variety – a local Bourbon mutation known for its elegant acidity and intense sweetness. The profile is elevated by the Natural Reposado process, where the cherries “rest” in cool conditions before drying, allowing sugars from the pulp to fully penetrate the bean. As a result, the Los Tonos parcel delivers an incredibly syrupy body and notes of ripe red fruits, all while maintaining exceptional clarity in the cup. It’s a perfect balance between a modern approach to fermentation and classic, fruit-forward drinkability that shines in pour-over brews.
