Drank it – ordered it!
I drank this coffee directly at the cupping in Aquiares – I reserved it for HAYB even before it was over!
I have a weakness for coffees from this farm, and a special weakness for this particular one. But this coffee… I haven’t drunk something like this before, even though you may think that HAYB with fake fermentation coffees stands. Costa Rica doesn’t come first to mind when thinking of coffees processed like co-ferments. Diego, however, manages a farm that is the size of a small town. In addition to coffee, they produce cacao, bananas, oranges – but also essential oils. The farm grows an arsenal of eucalyptus trees, which give shade to the coffee cherries. Diego came up with the idea of somehow combining the “superfluous” products that are produced during the production of essential oils with coffee. So the water in which they soak the eucalyptus leaves to extract the oils from them, he uses once again in the processing of some of the beans. Like right here! Another amazing coffee. Fresh, back in March it was waiting quietly in warehouses at the Aquiares farm, and now it’s already in our store and your cup!
