Starring: Mariana – an F1 hybrid, a close cousin of the famous Starmaya. It was created from a combination of IAPAR 59 and an Ethiopian variety with natural male infertility (yes, sounds like a genetic soap opera). Interestingly, it’s one of the first F1 hybrids that can be propagated from seed – and not just in labs and test tubes. A plant with character.
This particular lot went through thermal fermentation – something like a coffee spa with a sauna version of hard. The ripe cherries are sealed in airtight bags of thick plastic, which go into a greenhouse. There, the sun does its job: the temperature rises, and anoxic fermentation with heat-loving bacteria takes place inside. The whole process takes a minimum of three days, after which the cherries dry in the sun for 15 days. Finally – three months of aging in sealed bags. A coffee version of slow life.
