First – education. Second – thinking. Third – cheers to Team Pegasing.
In front of you are four coffees from the same plantation, donated to the cooperative by the same farmers, but processed in different ways!
Sipping one coffee next to another, you may wonder: is it natural or rather washed? What are the differences? The botanical variety of the coffee plant in this case is exactly the same, the main (essential!) variety is PROCESSING!
We’ve been pulling coffees from Team Pegasing for 3 or 4 years to HAYB, and we try to make a certain place on our shelf every year. This year it was a real battle! First, Bara – our warm friend from whom we buy coffees – let us know that this year we can count on a maximum of one bag from each flight. What!!!?! After all, these coffees at our place are a hit! And one bag will be gone before we know it, we have to do something. Bara doubled and tripled, the office of our importer in Indonesia did the same, and every now and then information dripped down to me: okay we managed two more bags from this flight, okay, nothing more, that in another processing, well sure I want it! This is, after all, one of our beloved cooperatives.
Indonesia’s motto is Unity in Diversity – you can translate that differently, but in this case, it makes the most coffee sense. You get 4 different but the same coffees. And you can think about the non-coffee sense while sipping delicious coffee from the box we prepared for you!
