It’s hard to have „first fiddle”
when the whole orchestra is playing loudly!

Sure, you can hear the botanical variety – and this is the first time we’ve had Ombligon at our roaster!

But it’s also impossible to ignore the yeast with which this coffee was inoculated during processing.

The coffee first fermented anaerobically for 48h. From the juice that formed during this time, the Ortiz brothers separated the yeast. The coffee then underwent the classic washed process – pulling the seeds from the cherries using a lot of water. So anaerobic and washed have already been ticked off – and now a twist, after all this, the coffee was inoculated with the yeast created in the first phase of fermentation. This mixture of yeast and washed coffee was left to lie for another 48 hours, then the beans were thoroughly washed in a large tub. This is what a spa in Colombia looks like if you’re a coffee fruit.

The complicated process manifests itself in high but balanced acidity. As for me, here’s a cake with lemon cream and raspberries – which is waiting for you after a massage at the spa resort.
