Colombia Finca Alto Cielo – HAYB Speciality Coffee
Anyelo and his brother’s family grow coffee on several farms. Farmers are constantly developing their knowledge about coffee, expanding bean drying stations and taking part in various training courses on specialty segment coffees. They built a modern place for drying and processing beans next to the house in Garzón to devote a little more attention to natural and honey processing. Last year a storm destroyed the complete “dryer”, but the new construction is ready. This time with concrete alloys and steel rods instead of bamboo. It was also possible thanks to the help of Touton Coffee – who also imported these beans for you.
The Tabi botanical variety was established in 2002, although work on it lasted from the 1960s. It is a cross between Typica, Bourbon and Timor Hybrid. One of the most important attributes is the immunity to leaf rust disease, but also the high quality of the brew, as in Bourbon and Typica beans. We chose them because of the very high sweetness and clean taste. Maybe if we knew different Spanish dialects better we could take this coffee without even tasting it – the name of the botanical variety, Tabi, means good in the Guambiano dialect (native Colombian tribe).
